Egg and Greens Delight

- 7 organic eggs
- 1/2 large red onion, diced
- 3 medium zucchini, diced
- 1 large head of broccoli, chopped
- 1 tsp Celtic sea salt
- 1/4 tsp freshly ground black pepper
- 1.5 tbsp fresh parsley, chopped
Preheat the oven to 375 degrees F. In a large bowl, blend the eggs, salt and pepper. Stir in the chopped vegetables.
Grease a baking dish with coconut oil spray. Pour egg mixture into the dish and bake for 35 minutes or until the eggs are set. Remove from heat and let sit for 7 minutes before serving. Top with chopped parsley to serve.
