Healthy New Year's Breakfast Recipe

Ingredients:

  • 3 free range, organic eggs
  • 1  cup cooked quinoa
  • 2 tsp chopped dill
  • 2 tablespoons goat cheese
  • 1 cup baby kale
  • 2 oz. cold smoked salmon
  • 1 avocado
  • 1/2 lemon 
  • Coconut oil for cooking
  • pinch sea salt

Instructions:
Mix cooked quinoa in a pan with coconut oil, Blend in with scrambled eggs and sautéed kale and serve. Add goat cheese and additional ingredients to taste.
